Pineapple Fried Rice


By popular demand, here is the recipe to my pineapple fried rice!  Enjoy friends, don't be afraid to put your own twist on it!  Of course, if you make a batch, you'll have to invite me over.


INGREDIENTS:
6 cups of cooked brown or white rice
(preferably 1-3 days old)
1/2 cup of chopped green onions
4-6 cloves of crushed garlic
2 cups of shrimp
1/2 cup of sesame seed oil
1/2 cup soy sauce
2 cups of cubed chicken
2 cups of pineapple chunks (canned works)
3 eggs
1 cup of chopped cilantro
1/2 cup shredded carrot
1 medium yellow onion diced
1/2 cup chunky peanut butter
(for peanut sauce)
juice of 1 lime
red pepper flake or Sriracha*

This recipe should yield 4-6 servings.
I've never measured when I've cooked this before, I do most of my cooking by feel and taste (lots of tasting...) and so these measurements are part guesstimation and part my own preferences (i.e. I LOVE cilantro so I'll put a jackload, which is the actual technical mathematical term).  So, subtract or add ingredients to your liking.  The great thing is that once all of your items are prepared, you just throw it all together- simple and delicious!

STEP 1
Add about 2 tbsp of olive oil to your large skillet.  Bring to a medium heat

STEP 2
Add diced onions and crushed garlic to pan.  Let sit until onions begin to turn translucent on the edges.

STEP 3
While waiting for onions and garlic to heat, season chicken cubes with salt and pepper.  Season to taste.  Add chicken to pan and bring to a medium-high heat.

STEP 4
In a separate pan, scramble 2 eggs.  Set aside.

STEP 5
When chicken begins to cook through, add shrimp.  Depending on the shrimp size, it should only have to cook for 2-3 minutes.  If your shrimp came with instructions on how to cook it, follow those.  Otherwise, just let them sit for a few minutes until they become a pinkish-orange.  

Also add pineapple during this time.

STEP 6
While the meat finishes cooking, in a sauce pan, boil 3/4 cup of water.  Add peanut butter.  Combine and heat until it thickens and consistency becomes like cottage cheese.  Once warm, immediately take off heat and set aside.  It's easy to burn this peanut sauce so keep a close eye!

STEP 7
Once chicken has finished cooking (brown them a little for extra taste and texture!), add rice.  Fry rice for about a minute then add peanut sauce, soy sauce, sesame seed oil, lime juice, and a little bit of pineapple juice if you have any left over!  Allow rice to soak up flavors for about 3 minutes.

STEP 8
Toss in scrambled egg, cilantro, green onion, and carrot.

STEP 9
Optional: Break last egg over the rice and mix it.  This serves as a combining agent.  Stir rice until egg finishes cooking.

STEP 10
Enjoy!
